Using the pure spring water of Metoba-no-Izumi, selected as one of Japan’s “100 Best Springs” of the Heisei era, our skilled brewery team crafts sake with traditional techniques and heartfelt care.

Origin of the “Yoikana” Name
“A name meaning ‘wonderful’”
The name “Yoikana” comes from the Buddhist expression yoki kana, meaning “wonderful.”
It is said to have been used by Buddha when praising his disciples, reflecting the care and quality we aim to put into every bottle.

Metoba-no-Izumi is recognized by Japan’s Ministry of the Environment as part of the “100 Best Springs of the Heisei Era”, included in the Matsumoto Castle Town spring water group. The spring flows right at the entrance of Yoikana Shuzo, making it a popular spot for visitors who come to collect its fresh water.
At Yoikana Shuzo, we use this super clear and gentle spring water for every step of our brewing process—from washing the rice to preparing the fermentation.
